The heart of Provence, the country of Daudet and Frederic Mistral, the tradition of the olive oil remains there. Which is the secrecy of this single, fine oil and fleshy?
Three actors are the law: The soil, with the foot of Alpilles, shone upon, with the shelter of the mistral, an arid ground but where water is never distant. The olive-tree, or rather olive-trees, component of the AOC valley of 'Les Baux de Provence'. The man, the 'moulinier' whose intervention remains decisive in the development of the taste. It is as much a work which consists in recovering oil in the fruit as the subtle assembly between the varieties. The marriage of the flavours, very different over the two months from press, make this oil, a fruity oil, balanced, an oil of exception. |
